I have a e30 with a 1900cc engine in it what I rally I think the Diff is a 3.6 I am after something like a 4.9 or something like that but what cars do they come out of

Jim, anything over a 4.45 is a motorsport item and not out of a road car. A 4.45 will transform it from the 3.6

Are you still using the e30 box or have you fitted the e36 engine and box? Using the e36 box, a 4.445 fd on a 15" tarmac tyre will have you doing around 110mph @7500 rpm
